I am not much of a sandwich eater, are you? Sandwiches have a lot going for them in terms of easy preparation and portability, but I don’t generally get excited about them. I’d rather have a giant salad or open-faced toast.
This sandwich, however, is something else. It’s all of my favorite things sandwiched between two slices of whole wheat bread: buttery avocado, roasted red pepper, as much of my favorite Greek salad ingredients as I could fit, a splash of balsamic vinegar and rich basil pesto. It wouldn’t be the same in any other form; sandwich is the way to go. I took back every insult I’ve thrown at sandwiches on first bite.
And the best part? It kept me full from lunch until dinner. Not many vegetarian sandwiches can boast that.
Before you go, though, please tell me about your favorite sandwich to make at home. I just might be on a sandwich-making kick. I took a couple of shortcuts with this sandwich by using store-bought pesto and roasted red peppers. Ta da! Lunch in under ten minutes.

My favorite Greek salad ingredients sandwiched between layers of bread smothered with avocado and pesto. A quick, satisfying vegetarian lunch (vegan if you use cheese-free pesto). Recipe yields 1 sandwich so multiply as necessary.

Ingredients
- 2 slices soft whole wheat bread
- ½ avocado
- 1 tablespoon basil pesto
- roasted red bell pepper (jarred is fine)
- cucumber, sliced into thin rounds
- thinly sliced red onion
- 6 pitted kalamata olives, thinly sliced
- handful spring mix
- balsamic reduction or regular balsamic vinegar
Instructions
- Pit and peel the avocado half and mash it with a fork. Use a butter knife to spread avocado on one slice of bread. Spread a layer of pesto on the other slice of bread.
- Top the avocado bread with a single layer of roasted red bell pepper. Then add a layer of cucumber slices, red onion, olives and spring mix. Use a spoon to sprinkle some balsamic reduction over the lettuce. Place the pesto slice on top, pesto side down.

There are many Middle Eastern/Mediterranean grocery stores where I live and I’m addicted to a couple of ingredients: ajvar (red pepper spread) and labneh (kind of a yogurt cream cheese). I like to use those in a sandwich with cucumber and whole mint leaves (oddly refreshing).

This was amazing and simple. I went a little off script and added fried prosciutto with melted mozzarella. I also did fresh basil and bell pepper instead of pesto. Thanks for the recipe!

i wouldn’t say that i am a sandwich fanatic, but from time to time it feels really good to take a big bite out of a yummy sandwich! i always put way too much stuff in my sandwiches (can’t help it). i think my favorite right now might be warm grilled chicken, herb cream cheese, bacon, smoked paprika mayo, and pickle on toasted sesame bread! ooooh yeah, baby.

I wonder if there is a sandwich lover’s fan club. If there is, I nominate myself as president. I. LOVE. Sandwiches. Probably too much. And I love Greek salad so I’d undoubtedly love this!
A favorite of mine is this one that I make that is pretty healthy and so satisfying:
First I make an artichoke heart spread using: [obviously] ‘choke hearts, roasted garlic, a bit of fresh grated parmesan, olive oil, salt and pepper. Then I spread that GENEROUSLY onto a slice of bread [Ezekial, or home-made foccacia or challah] and pile on a leafy green veg, such as kale or collards that sometimes I’ll sauté in EVOO first. Then I shave some chunks of parmesan onto that and top with the other slice of bread. Drizzle with EVOO and put that into a panini press until everything is hot and oozing. Finally, I drizzle some raw honey on top. Sure its sticky and messy, but it is sooo worth it!

one of my favorite sandwiches to make isis super simple. It’s with roasted red pepper hummus (or kind of hummus that you love) with mashed avocados seasoned with a little pepper and a dash of lime, and alfalfa sprouts on a nice baguette! It’s so frigging yummy!

I take sandwiches into work every day – open toasts just aren’t practical when you’re eating at a desk. My favourite is homemade wholegrain bread with pumpkin and poppy seeds, avocado mashed with chilli, roasted red peppers, rocket and feta cheese. So very similar to this one which looks delicious!

I love everything about your sandwich! I can never get enough Greek Salad and avocado is kind of a must on any sandwich in my book. I actually an a huge sandwich fan, they are such an easy delivery device and quick fix. These days I’m eating mashed avocado with lemon, salt, and tons of freshly chopped cilantro from the garden, open-faced.

Made these last night for a simple supper with the boyfriend. We used olive tapenade in place of pesto as he is allergic to nuts. They were fantastic! Will definitely be a go-to easy meal for me! Thanks for another wonderful recipe!

This sandwich looks good, I make something with a similar idea but in a wrap: I first spread on some cream cheese and then add the veggies (red onions, lettuce, shredded carrots, sliced cucumbers, avocado, olives) and wrap it up! The nice thing is you can make this the night before and leave the wrap in the fridge, it is good the next day and the cream cheese gets in more with the veggies overnight. It is a nice thing for work lunches!

My favorite vegetarian sandwich is what I call the “Mumbai Streets.” I curry leftover potatoes and spread that on whole wheat toast with hummus, chili flakes, muenster cheese, and sauteed onions. It’s also great open-faced with a fried egg on top. It’s definitely a carb-loaded treat for me.

Hi there! I was desperately searching for a good sandwich recipe for my lunch, and I knew that I wanted avocado on it, but I couldn’t find the right one (oh, the plight of a hungry teenage girl!) until I stumbled upon your website! This is easily one of the best sandwiches I have ever had. It was so delicious and fresh, and it really hit the spot- it’s 90 degrees here in Cleveland! I didn’t have any roasted red peppers, but I did have roasted red pepper and basil pesto, so I killed two birds with one stone there. I will definitely make this again, it’s my new favorite! I tried this tonight partly because I wanted to use the fresh bread I had and I also had fresh pesto and an avocado on hand.

I like this colorful combination of ingredients. It is not very Greek except for the calamita olives. Add feta cheese and Salonika peppers and fold it into Pita bread and then it is an homage.

This recipe has the perfect ingredients. Thank you! A favourite of mine is a very simple sandwich with ciabatta. Sprinkle with olive oil, and add a large handful of lovage. Hard to believe how delicious that can be! I also like sandwiches with slices of mushroom pâté (made with potobellos, pecans, green onions, tamari and rosemary, put raw in a blender, and baked). Another idea: a good ratatouille sandwich, again with crusty bread. In Provence, they make pan bagna, which is delicious, and can easily be “vegetarianized”. I hope you enjoy these ideas. This is my favorite vegetarian sandwich! It takes me right back to a beach on Crete I visited as a child where the local beach cafeteria made something similar.
I add feta and sometimes tomatoes, and I use fresh bell pepper instead of roasted because those are expensive in Denmark, hehe.

Kate! Great sandwich, beautiful colors and good for us too. My tweaks are these…I got one serving of babaganush, and hummus at my local greek restaurant, sliced open a pita and painted the insides with those. Put my sliced cucumbers and red onion in a bowl with Rice Wine Vinegar and a sprinkle of sugar. While those married, I sliced Holland Bell peppers, my calamata, and avocado slices, and then drained cucs, arugala, and mixed all in a bowl with a few sprinkles of my fav balsalmic (Barengo of Modena), stirred together and stuffed that pita! My fav. sandwich of late is a tomato rueben.
I use bread or grain free tortilla slather with mayo.
then slices of garden tomatoes, sauerkraut, homemade thousand
island dressing and thinly sliced swiss cheese.
Broil it for a few minutes and it is soooo delish!Reply
